Chouriço a Bombeiro Instructions:

To make Chouriço a Bombeiro, start by placing a Portuguese chouriço sausage on a terracotta roaster. Using a high-proof alcohol is key for the flame effect; Everclear or another grain alcohol (at least 50% alcohol by volume) works well. Pour a small amount of alcohol into the bottom of the roaster, enough to cover the base but not too much—about a tablespoon or two should suffice.

Light the alcohol carefully with a long lighter or match, and allow the flames to char and warm the chouriço. Use a pair of tongs to turn the sausage occasionally for even charring and to achieve a traditional, smoky flavor. Once the flames die down, slice and enjoy your chouriço with crusty bread for an authentic Portuguese experience.

 

Important Tips:

  • Avoid Thermal Shock: Do not place hot cookware on cold surfaces or under cold water. Use a trivet to protect it from temperature shocks.
  • Cleaning: Hand wash with warm water and mild soap. Avoid abrasive cleaners or dishwashers.
